How do I learn Annuities ..?

The issue here is that we are not talking about Death Claims. We are talking about Annuity Payments.

And we are not talking about individual agreements on individual policyholders who happen to be high risk.

These are blanket agreements for 80% of the Guarantees that carrier makes.

I understand what you are saying but if it is disclosed on one line of business, wouldn't it carryover to the other lines?
What I know about annuity reinsurance could fill a shot glass (not much) but when a company reinsures the line of business that they issue doesn't that company have ultimate responsibility regardless of the condition of the reinsurer?
What exactly is the company reinsuring the minimum death benefit?
Are they reinsuring minimum withdrawal benefits?

In the Senitinel & Atlantic Coast carrier examples, the reinsurers are, I believe, owned by the same parent company of them all, A-Cap. A-Cap then lends money to Private Equity firm, 777, who then makes investments around the world in illiquid investments that normally wouldn't be permitted by the carrier or traditional reinsurer. From what I read, a 100 year company, Atlantic Coast had reported its risk based capital to be in great shape (+1357%), but when Questioned & corrected it was in very negative shape (-20,000%)........ oopsie.

Here is some light reading. https://doi.sc.gov/DocumentCenter/View/14867/ACL-SAR-Public-Documents

CBL seemed to be doing some of the same with the added element of the owner siphoning off money to himself
