RC for my biggest carrier in the area is 100/sq ft minimum though they like more. It really depends on the area.
I would also be curious to the carrier and what state/region you find this is in, if you are willing to share that. I know your state is one thing, but you could be quoting in a neighboring state for all we know.
Also, if you are quoting and the house gets inspected, then you legitimately could have to raise the coverage based on what you see. If they look at the house and you put economy or average, like someone said, and the inspector goes to the house and says differently, the carrier could tell you to increase it. Hardwood floors are different than shag carpet in the cost estimator as well as the outside of the house and what it is made of. If the house is inspected and said to change the square footage as well, then, well, you have a higher square footage and a higher cost per sq. ft for a double whammy.
Let's be honest, some people go through the cost estimator line by line. Others will quote in the CE "average" and call it a day. They don't ask the heating type, the foundation of the house, how many fireplaces and the type, and things like that. If you are one of these people, and you are using a carrier that inspects EVERY house in that area (ASI claims to do that around me) then perhaps you are having an input issue and speeding through things. It can easily be fixed. If the carrier e-mails you back with a blanket statement of "everyone is going up 25 dollars more per sq. ft" then you can't fix that and need to start quoting at it higher.
I definitely think you need to ask you carrier reps what is going on. Run the same quotes through with them there and see if they can tell you what could be going wrong. That seems to be the consensus, that your carrier rep needs to give you the input that you need.
