I meant creating new content for your blog.
Creating new blog posts weekly is enough to get Google to notice you without doing much else.
Posting daily will really make a difference if you can do it consistently.

When you have a few blogs, websites, it's so difficult to post daily, even though, as you said, it helps quite a bit.

To post five 200 word blog posts per week or post two 500 blog posts per week? Or would it not make a difference?

I'd go with five 200 word blog posts.
You can even write them all at once and schedule the publishing dates of the other four.

I think it would matter if your trying to rank the blog posts for long tail keywords or not. If not and the blog posts are just for interlinking, then you should be fine.

Content is king, but good content trumps content every time. There's a lot of crappy content out there.

Agreed, and doing regular Q&A/FAQ videos, with proper tags, descriptions on YT and other submission sites ( there's tools to automate) and pull the YT video back to your blog...search engines love it.. if you google " california k-12 point of sale " you'll see what I mean.
